  • flour weight = ((desired loaf weight / (100 + desired % hydration + desired % salt + desired % starter)) * 100)
  • water weight = ((desired % hydration / 100) * flour weight)
  • salt weight = ((desired % salt / 100) * flour weight)
  • starter weight = ((desired % starter / 100) * flour weight)
  • final dough hydration = ((water weight + water weight in starter for recipe) / (flour weight + flour weight in starter for recipe) * 100)
  • flour weight in starter for recipe = (starter weight / (100 + starter % hydration) * 100)
  • water weight in starter for recipe = ((flour weight in starter for recipe * starter % hydration) / 100)
